DRACUT — The aroma greets customers warmly as soon as they open the front door.

Inside the Sugar Coated Bakery, located at 1794 Bridge St., Unit 13A, inside the Bridgewood Plaza, the eyes dart to one delectable goodie to the next, as that aroma plays tricks on the mind.

Cupcakes, cookies, pastries, cakes large and small, pies of all kinds and an assortment of fresh bread and rolls. And there is more, each one a new concoction from Jennifer Dumais, the 26-year-old baker who creates everything from scratch. Dumais just got the space a month ago and had a soft opening on March 24. Her grand opening came days later on March 27.

“So, the plan was always to open my own bakery some day,” said the Dracut native, who graduated from Johnson & Wales University in Providence, R.I., with a bachelor’s degree in food service entrepreneurship.

She unlocks the door at 6:30 a.m. and prepares items that she hopes will fly off the shelves inside the spacious bakery, which features several small tables and chairs, as well as a sofa and free Wi-Fi. Cakes are made to order, as are breads, cookies, pastries and cupcakes, each painstakingly frosted with precision.

“It’s an all-day process because I only have the one convection oven, so I have to manage my time properly to make sure everything gets done in a day,” said Dumais, who on Saturday was sharing free samples with several customers who stopped by to check out the bakery.

She bakes in small batches, so everything is fresh from the oven. Baking in small batches also eliminated the necessity of throwing items away at the end of the day.

“Whatever bread is left at the end of the day becomes bread pudding the next day,” says Dumais, who is looking forward to the Easter holiday. “We have cupcake platters, cookie and pastry platters, all reasonably priced.”

She has not yet gone sugar-free, but hopes to perfect such menu items in the not-too-distant future. She will not be nut-free.

“I love nuts,” Dumais said.
